I had a culinary moment this weekend bloggers. Yep. May even bring a tear to your eye. I was craving a simple and delicious crab salad my chef friend Marc Gonzales made for me years ago. When I arrived at the market...NO CRAB LEGS! But wait. What's that in the corner? Lobster tails. ON SALE! Yep. So I feel it's only fair since I posted it on facebook to give you this simple, quick recipe for LOBSTER TWO WAYS!!!
Steam 2 lobster tails for 8 to ten minutes. Place one lobster tail in an ice bath to chill for your first course. The other can rest on a plate for now. After the lobster tail cools (around 5 to 10 minutes) use your kitchen shears and cut through the shell, removing your perfect lobster meat. Cut an iceberg head in half or quarters (depending how hungry you are!). Place the beautiful lobster tail on top along with half of a sliced avocado. Dress with either a homemade thousand island or purchase a good one while at the store (I bought Ken's Steakhouse).

Now. Round two. DING DING! Take the other lobster tail and cut the shell down the middle but DO NOT remove it yet. Sprinkle a 1/4 teaspoon or so of paprika and a dash of salt. Now. The good part. Add about 2 tablespoons of melted butter and slather it all over this baby. Broil for 5 minutes. Remove the shell and place your perfectly cooked lobster meat on a plate with more drawn butter. I had a perfect baked potato to accompany the lobster.
EAT!!
Now I know must East Coast friends think I'm crazy for even buying lobster here in the desert. But, hey, it was there and the tails were on sale for $6.99 a piece. UNBELIEVABLE.
