OK. So perhaps you have one too many beers this weekend. Or maybe, just maybe, someone you know has a few too many upside down Patron margaritas. This. Is. The HANGOVER cure. This brunch burger is meaty, eggy and SAUCY! And you know I like saucy. So grill up or fry your favorite burger and follow the directions below for the hollandaise sauce and The Bennie Burger assembly!
Lightly toast sandwich sized Thomas' English Muffins (I mean, really, is their any other brand than my own?!?!)
Drizzle some hollandaise sauce on muffin
Place a slice of cooked Canadian bacon, eh, on the bottom muffin (tee hee I said bottom muffin!)
Place prepared burger on the Canadian bacon
Top burger with fried egg done to your liking
Drizzle, oh who am I kidding, POUR the hollandaise sauce over the egg
Top with shredded manchego cheese and oven dried tomatoes (or used store bought sun dried)
Finish off with the top English muffin and let your culinary fireworks begin! MOUTHGASM ALERT!
Serve with a spicy blood mary or a Red Stella (cold Stella Artois with bloody mary mix or tomato juice!)

HOLLAINDASE SAUCE RECIPE (courtesy of helpwithcooking.com)
Ingredients- 8 oz (225g) of butter
- 3 large egg yolks
- 2 tbsp of hot water
- just over 1 tbsp of lemon juice
- pinch of salt
- pinch of cayenne pepper
- Melt the butter slowly in a medium-sized saucepan. Once the butter has melted, remove the pan from the heat and leave to one side.
- In a small mixing bowl, whisk together the egg yolks.
- Whilst continuing to whisk, add the lemon juice, salt and cayenne pepper to the beaten egg yolks.
- Next, very slowly to begin with, whisk in the melted butter and the 2 tbsp of water. Continue to whisk constantly.
- Return the mixture to the saucepan, heat over a very low heat, still whisking all the time until the sauce thickens.
- Serve immediately or keep warm for up to 30 minutes before
